Vin Jaune is Savagnin left in barrels that are never topped up. A film of wild yeast, the voile, grows over the wine and guards it for at least five years, and it can't leave the cellar until six years and three months after harvest. It tastes of walnut, curry spice and salt, and the law allows one bottle for it: the 62 cl clavelin.

“One terrace wall falls every winter. We rebuild it by spring, stone by stone.” Marc Hauteroche, on a Petite Arvine rarely seen in the US.
A two-person distillery in a side valley. They pick the pears themselves, and dig gentian root by hand on the high pastures every September.
